Strawberry, watercress and cashew salad

I’ve been seeing a lot of great looking strawberries at the market lately. What’s even better than fresh strawberries from the market? Fresh strawberries from the backyard.

strawberriesI wanted to do something with the strawberries besides eat them plain. I recently received some delicious sweet and salty cashews from Oh! Nuts, and I knew they’d be great in a salad with my berries.

I decided to go with watercress as the base for the salad. I really like watercress, but I don’t use it often enough. I tossed the watercress in a very simple dressing of minced shallot, lemon, honey and olive oil. I added lots of strawberries, the cashews and some shaved ricotta salata.

This is a great summer salad, and very easy to put together. Strawberry season has just started, and I’ll be getting berries from the yard for a few more months. I need to come up with some other ways to use them, any ideas?

Serves 3-4

2 bunches of watercress, trimmed
1 cup of strawberries, halved or quartered
1/4 cup ricotta salata, shaved
1 small shallot, minced
1 tablespoon lemon juice
1 heaping teaspoon honey
1 tablespoon extra virgin olive oil
salt and pepper to taste

Whisk together the shallot, lemon juice, honey, olive oil, salt and pepper. Add to the watercress and toss to coat. Top with strawberries, cashews and ricotta salata.

I would love to plant strawberries, too bad the weather in Jakarta is too hot and humid.

Absolutley delicious looking! Watercress is one of my favorites, unfortunately it has a very short shelf life so very few of our grocers carry it!

My MIL always, always puts strawberries and red onion in her salads (even in the dead of winter), and I love the way it brightens things up. And it looks so pretty!

What is watercress like? Is it peppery? I don't see it here often, and when I do it's expensive.

The salad looks fantastic--of course! All your food does!

I just read in Bon Appetit that watercress and strawberries are two of the healthiest foods. The list also included bacon, but that's okay. :)

I really like this! My strawberries usually do not make it past the bowl in which they are washed :) I've been trying to save a few for baking, but I would love to use them in a creative salad like this as well!

What an interesting combination! Last summer I had my own, and it was wonderful... Now I have to buy them and have a hard time eating them all (I buy too many) Great salad idea... I dearly love cashews, too.

Amanda - Watercress is peppery, but delicious. It's also good mixed with other greens. The stems can be tough, so it needs to be trimmed well.

Angie - My husband doesn't complain about my cooking. Not much anyways!

I have never had ricotta salata so I will have to hunt that one down. I am guessing that it is a firm ricotta? This salad is a classic!

You might want to try a mixed greens salad with strawberries, avocado, cukes, and kiwis with a poppy seed dressing.

This salad is perfection. I made a very similar one (didn't make my own dressing!) with some beautiful strawberries last week for my best friend's bridal shower. Everyone went crazy for it.

As for uses for the berries, you can make the warm strawberry crumb cake I blogged about last month. It's from Food & Wine and it's AWESOME.
