I wanted to do something with the strawberries besides eat them plain. I recently received some delicious sweet and salty cashews from Oh! Nuts, and I knew they’d be great in a salad with my berries.
I decided to go with watercress as the base for the salad. I really like watercress, but I don’t use it often enough. I tossed the watercress in a very simple dressing of minced shallot, lemon, honey and olive oil. I added lots of strawberries, the cashews and some shaved ricotta salata.
This is a great summer salad, and very easy to put together. Strawberry season has just started, and I’ll be getting berries from the yard for a few more months. I need to come up with some other ways to use them, any ideas?
Serves 3-4
2 bunches of watercress, trimmed
1 cup of strawberries, halved or quartered
1/4 cup sweet and salty cashews
1/4 cup ricotta salata, shaved
1 small shallot, minced
1 tablespoon lemon juice
1 heaping teaspoon honey
1 tablespoon extra virgin olive oil
salt and pepper to taste

Absolutley delicious looking! Watercress is one of my favorites, unfortunately it has a very short shelf life so very few of our grocers carry it!

My MIL always, always puts strawberries and red onion in her salads (even in the dead of winter), and I love the way it brightens things up. And it looks so pretty!
What is watercress like? Is it peppery? I don't see it here often, and when I do it's expensive.

I really like this! My strawberries usually do not make it past the bowl in which they are washed :) I've been trying to save a few for baking, but I would love to use them in a creative salad like this as well!
These look so much better than any strawberries I've seen this season! Hopefully in a few weeks I'll start seeing more at the Farmer's Market here in the Northeast.

Amanda - Watercress is peppery, but delicious. It's also good mixed with other greens. The stems can be tough, so it needs to be trimmed well.

This salad is perfection. I made a very similar one (didn't make my own dressing!) with some beautiful strawberries last week for my best friend's bridal shower. Everyone went crazy for it.
As for uses for the berries, you can make the warm strawberry crumb cake I blogged about last month. It's from Food & Wine and it's AWESOME.
