Italian seafood stew

I first noticed this recipe in Giada’s Family Dinners a few months ago, but wanted to wait to make it until corn was in season. I started seeing fresh corn in the markets a couple weeks ago, and moved the recipe to the top of my list. The dish combines an assortment of seafood with fennel, corn, shallots and potato.

For the seafood, I went with littleneck clams, mussels, salmon, sole and pink hopper shrimp. You can use whatever variety of seafood that you like; I think scallops would be a great addition.

The seafood and vegetables are cooked in white wine, tomatoes and fish stock. I love that this is a one-pot meal; all you need is bread or a salad and you’ve got a great dinner.

I adore seafood stews. Just love 'em! This one looks especially fabulous. I can't wait to check out Giada's book, so I can try this recipe. Man oh man, I also need to get my hands on some fresh corn. Yay for N.Cal. having so many wonderful farmers' markets!

My husband would be so happy if I made this! He spied it in Giada's books as well and has been asking every since. I love the fresh corn that comes out in the markets now...there is nothing like it with that ultra sweet, fresh flavor. Love it! Your stew looks amazing.

I made something similar to this a few months ago; it's great, isn't it? Plus it's an all-season meal: use what's in season/what you have. It can be light & simple for summertime or heavy & warming during colder months. The perfect meal.
