Chicken with prosciutto and sage

If you asked me to name my favorite cookbook, I’d be hard pressed to come up with just one. I have so many, and they all serve their purpose – how do you compare a bread baking book to a book about thai food? However, there is one book that gets used more than any other, and that’s the Everyday Food cookbook. I refer to it so often that the binding is broken and the pages are falling out. It’s just good, simple food that can be prepared in a reasonable amount of time. There are no specialty ingredients required, and most of the dishes are relatively healthy. I’ve made dozens of recipes from this book and they’ve all been great.

My latest success was chicken with sage and prosciutto. Chicken cutlets are topped with a sage leaf and wrapped in a slice of prosciutto. The cutlets are dredged in seasoned flour and sautéed until golden brown. The chicken is finished with a simple pan sauce of white wine, chicken stock, butter and sage. I went with the suggested side dish of spinach with golden raisins.

This was quite good, and on the table in less than 30 minutes. It doesn’t get much better than this when it comes to quick and easy weeknight cooking.

Your chicken looks gorgeous! I make a recipe where I stuff the chicken with a goat cheese & sundried tomato mixture and then wrap it in prosciutto; it looks very similar to yours.

Can't go wrong with fresh sage at all - that looks really good. I love any meal that can be on the table fast during the week - I do a prosciutto wrapped halibut fillet that's the same idea.

Chicken is only appealing to me when it's been "doctored" - ie. covered in cheese and sauce or rolled in some bacon like meat. This will work perfectly!!

This sounds delicious! I love the flavor of proscuitto, especially when it's combined with chicken. I found a roll of fresh mozzarella wrapped in proscuitto at the grocers the other day, and I can't get enough of it! Will have to add this to my list to make, especially since it's ready in 30 minutes. Thanks for sharing!

I do a really similar thing but I make a paste of garlic, thyme and salt and rub it on the chicken before I wrap it.

Yum, that looks & sounds good. I have that cookbook & have actually made a couple of desserts from it though I've made some of their dishes from the magazine. Everything I've made has been really good. I guess I should break it out to look at again.

Anything with prosciutto always has my attention. I've also been really into adding sage to things lately.

I made a dish very much like this for my mother's birthday last year. I can only make it for a crowd because my husband is the anti-me. He won't touch prosciutto. I had to make one piece without the ham for him.

Sara, I love this dish. It looks amazing all wrapped in Prosciutto. I bet it adds a lot of flavor. I find Chicken breasts to be a bit dry. So, this must really help. Love it!

Always looking for a way to do chicken - and anything with prociutto gets my vote. Reminiscent of chicken saltimbocca. I thiink this will be made this week. Even have the sage.
