I woke up this morning and realized that we had over a dozen bananas in the house. That's way more than the two of us can go through this week, so I decided to make banana bread. I also had half a bag of shredded coconut. Solution? Coconut banana bread! The nice thing about this recipe is that it's from Cooking Light, so it's one of those treats you don't have to feel as guilty about. The coconut that gets sprinkled over the top of the bread before baking gets caramelized and crispy in the oven. I skipped the glaze because I didn't have any powdered sugar in the house.
