Adobo pork tenderloin with grilled pineapple salsa

Some of the most unexpected ingredients come to life on the grill. Ever tried grilled lettuce? If you haven’t, you should; trust me on that one. In this recipe, pineapple is tossed on the grill to create a unique and delicious salsa for pork tenderloin.

The pork tenderloin is marinated in a mixture of lime juice, garlic and spices. While the pork marinates, the pineapple and some vegetables go onto the grill. The original recipe called for grilling the pineapple with red and yellow bell peppers, and left the red onion and jalapeno raw. I figured that I might as well throw everything onto the grill; I prefer cooked onion over raw onion anyways.

grilled pineappleOnce the pineapple and vegetables are done, they’re coarsely chopped and mixed with lime juice and cilantro to create a salsa.

After the salsa is made, the pork goes onto the grill. I tend to cook pork until it’s just slightly pink on the inside.

The pork and pineapple salsa is a great flavor combination, but I could also see this salsa being great on chicken or fish.

  1. Sounds wonderful! I prefer pork over beef and chicken anyday. I haven't tried grilling pineapple or any other fruit. I'm always a bit wigged out about grilling fruit on the grill. You know with the meat having been cooked on there. I guess I could do it before the meat, duh.

  11. Your Adobe pork looks so yummy! We recently made pork burgers topped with grilled pineapple and jalapeno sauce. Same flavors, different take.

    And I love your cracker recipe!!! We're trying to eat more naturally and I was just saying to my husband tonight that crackers were posing a problem. We love them, but the commercial ones are filled with fake ingredients.

    We love salsas in our kitchen and this one is just right. Grilled is the best way to serve pineapple.

    I've seen grilled lettuce but never got up the courage to give it a try. Thanks for the encouragement. If you say so, then it's got to be good.

    I like that you grilled everything. I'm not a huge fan of raw onion, just too sharp. And yes, grilled lettuce is quite the experience :)
