Mini cornbread puddings

I pulled this recipe out of Everyday Food magazine a few years ago, and I haven't made another cornbread recipe since. I find that sometimes cornbread can be dry - not these muffins. They're actually called cornbread puddings because they come out so moist.

The recipe starts out with typical cornbread ingredients - flour, cornmeal, baking powder, baking soda, sugar and salt.

dry ingredients The dry ingredients are mixed with an egg and sour cream. The sour cream adds all the moisture, there's no butter involved. I use light sour cream, it works just fine. A generous amount of corn kernels are also stirred into the batter.

muffin batter The batter is spooned into muffin tins to bake. You can use mini muffin or regular muffin tins. If you go with a regular muffin pan, add a few more minutes to the bake time. Here I used a mini muffin pan, but I almost always go with full sized muffins.

mini cornbread puddingsI tend to serve the muffins with jam, but they're also great with butter or honey. If you wanted a more savory muffin, you could probably add some minced bell pepper or jalapeno to the recipe.

Oboy! You just reminded me I have a half-used container of sour cream in the fridge for 2 weeks now. Oh well :/ Timing! Ha ha ha. I love cornbread, especially with gravy and honey (I'm weird like that).

These corn muffins are perfect! I never thought to add whole kernels to my muffins. Actually, I haven't made corn muffins in years, and these might just push me to do it! Perfect with a salad for lunch. (or with honey!)

How did I miss this recipe in Everyday Food? I subscribe to it and it's one of my very favorite food magazines. I am from the south and cornbread is food for the soul. Love the mini ones and the fact that they are moist. You're right, cornbread can be dry. Thanks for this recipe.

Delicious! I'm bookmarking that recipe - I just tried to make a whole wheat cornbread muffin but it was a muffin FAIL. Definitely not blog worthy lol.

My cornbread efforts have been less than stellar. (Even the birds won't eat them). I like the addition of the light sour cream - so will try this. The family loves cornbread and this looks perfect as a side for some of my barbecue meals.

I know this is probably NOT what you were going for with these, but those totally remind me of the mini corn muffins from Kenny Rogers! We ate there a couple times when we were visiting Vegas as youngsters, and I couldn't get enough of the corn-studded muffins!

We just like making cornbread with lots of fresh corn and pimentos in it. Similar, but a wee different than this. Sweet corn really makes cornbread so good!

There is a barbecue place in my neighborhood that makes something similar to this. It's a yummy idea. Take something as delcious as cornbread and make it al ittle creamier and richer.

I think it'd be really good to grill the corn first, and then cut off the kernels.

Thank you!!I needed something for a canoe to the rock breakfast/brunch and thought hmm.. corn pudding muffins. Typed it in, yours came up. Here's what I did- used plain yogurt instead of sour cream, added green pepper and onion to one batch and also black olives to a second batch. I did them in regualr size pans. Mine came out even more golden than yours. Beautiful! I made two herb butters- fresh sage/rosemary and fresh garlic/cayenne. I plan to serve them cool in the morning with the room temperature butters. I like them so much I am going to make them for family dinner this week too! They are DELISH!!
