Bacon and egg rice

I pulled this recipe out of Gourmet magazine a few months back because it seemed like an interesting take on fried rice with little prep time. I knew I was going to be busy this week, so I planned to make this dish with leftover rice from last night, even though the recipe says not to. I used leftover basmati rice, and it came out fine. I also used shallots instead of white onion, and I ended up adding a few splashes of soy sauce at the end to accentuate the flavors.
